Flaxseed Oatmeal

Our kids love oatmeal. I think it’s because they feel full and satisfied with warm little tummies. So, this version of oatmeal really evolved over time as I kept trying to add new things and boost the nutritional value even more. I think I finally found one that they all enjoy!

Flaxseed Oatmeal (Lactose Free)

  • 2 Cups Old-Fashioned (or Organic) Oats
  • 2¼ Cups Soy Milk (be sure to use a non-GMO brand)
  • 2 TBLspn ground flaxseed
  • Sucanat sweetener, Honey, or Maple syrup
  • Ground Cinnamon, to taste
  • Whole fresh blueberries
  1. Combine oats and soy milk in pot (over stove) or in a glass container (for microwave).
  2. Heat to boiling and continue cooking until oatmeal begins to thicken.
  3. When it reaches your desired consistency, remove from heat and sprinkle oncinnamon, to taste.
  4. Mix in ground flaxseed.
  5. Serve with extra soy milk, and your choice of healthy sweetener and berries.
For a fun twist, create an "Oatmeal Bar" where your kids can try out different mix-in flavors and ingredients. Try out crushed almonds, golden raisins, any type of chopped fruit, etc.
